You Will Need:
3 1/2 c. flour 2 1/2 tsp. baking powder 1 tsp. baking soda 1 1/2 tsp. salt 3 tbs. chia seeds 2 tsp. ground cinnamon 1 1/3 c. sugar 2/3 c. butter flavor shortening 4 eggs 1/4 c. milk 2 c. banana~mashed (about 3 medium ripe bananas) 1 Large mixing bowl and 2 small mixing bowls Hand mixer or whisk Spatula 2 greased loaf pans~This recipe makes 2 nice loaves! |
What to Do:
1~Mix the flour, baking powder, baking soda, salt, chia seeds and cinnamon in a small mixing bowl, and set aside. 2~Mash banana in another small mixing bowl, and set aside. 3~Using a whisk or hand mixer, cream together the sugar and shortening in large mixing bowl. Mix in eggs and milk, until it's nice and smooth. 4~Alternate adding dry ingredients and mashed banana to the wet mixture, trying to keep as many lumps out as possible. 5~Preheat your oven to 350 degrees. Lightly grease your loaf pans (we used Pam cooking spray). 6~Divide your batter between the two pans. Bake for 60 minutes. 7~Allow to cool in pans for a few minutes, then lightly brush tops with melted butter and sprinkle with cinnamon sugar, if desired. |
