Ingredients you'll need: 2 cups water 1 TBS. butter 1 TBS. ground cinnamon 1 cup uncooked white rice 3 cups milk 1 egg, beaten 4.6 oz. box Cook & Serve Vanilla pudding mix 1 tsp. vanilla *If you want to make this recipe a little more healthy, you can always substitute margarine for the butter, and replace the milk with a lower fat (I used 2%), or even soy or almond milk! |
1~Add the water, butter, and cinnamon together in a pan, and bring it to a boil.
2~Add the rice, and reduce heat to a simmer. Cook until the liquid is absorbed.
3~Add the milk and egg. Stir until well mixed.
4~Add your box of pudding mix. Stir until well mixed.
5~Add the vanilla.
6~Bring the whole mixture back to a boil, stirring occasionally. Don't let it stick! Boil for 5 minutes. Remove from heat, and let stand until cooled and thickened. Spoon into serving dishes, or refrigerate. Makes approximately 8 ~1/2 cup servings.
You can garnish with a little extra sprinkle of cinnamon, if you like.
