
This is a super yummy recipe I make myself. I am trying to get more health-conscious and eating healthier is part of that! I have a date with the beach soon, and well~I'm not quite ready for it~LOL.
If you want a quick, tasty, HEALTHY meal~try this~you just might like it...I even have the nutrifacts~although they may be slightly off, since I used only 1/2 cup of the carrots, mushrooms, and onions, and the calculator put in 1 cup measurements.

My yummy combination of fresh vegetables, sauteed in coconut oil, and garlic, with just a dash of sea salt and pepper.
Minutes to Prepare: 10
Minutes to Cook: 25
Number of Servings: 4
Ingredients:
1 cup chopped red cabbage
1/2 cup diced onion
1/2 cup sliced baby carrots
1/2 cup sliced mushrooms
1 medium potato, cubed
1 tsp. minced garlic
1 Tbs. coconut oil
dash sea salt
pepper
Directions:
Melt coconut oil in pan over medium heat. Add all ingredients at once. Stir occasionally. Cook until vegetables are tender.
Serving Size: Makes 4 1~1/4 cup servings
Number of Servings: 4
Variations~You can substitute other vegetables, as desired. For a heartier meal, add some boneless, skinless chicken breast! Keep in mind that variations will change the nutrition facts.
