First, the recipe...These cookies do not contain toffee, the use of salted butter gives them a fabulous toffee flavor!
You'll Need: 1 cup of SALTED butter, softened but not melted 1/2 cup of granulated sugar 2 teaspoons of vanilla 2 cups of all-purpose flour 1/2 teaspoon of salt 1 and 1/2 cups of cashew pieces (you could substitute pecans, if you prefer) 2 cups of powdered sugar for rolling |
Cream together the butter and sugar. Add vanilla and flour, and mix well. Add the nuts, and mix until well incorporated.
Use a teaspoon to portion out dough into about a 1 inch ball. I roll them in my hands. Place them on your cookie sheet, and bake at 325 degrees for about 20 minutes.
Let the cookies cool slightly after you remove them from the oven, then roll them in powdered sugar to create snowballs!
If they don't all get eaten right away, you can store them in an airtight container right on your counter.

Rnd 1: ch 2. Work 10 hdc in 2nd ch from hook. Join. (10 sts)
Rnd 2: ch 1. Work 2 hdc in each st around. Join. (20 sts)
Rnd 3: ch 1. *Hdc in next st. Work 2 hdc in next st*. Repeat (*) around. Join. (30 sts)
Rnd 4: ch 1. *Hdc in each of the next 2 sts. Work 2 hdc in next st*. Repeat (*) around. Join. (40 sts)
Rnd 5: ch 1. Hdc in each st around. Join. (40 sts)
Rnd 6: ch 1. *Hdc2tog. Hdc in each of the next 2 sts*. Repeat (*) around. Join. (30 sts)
Rnd 7: ch 1. *Hdc2tog. Hdc in next st*. Repeat (*) around. Join. (20 sts)
Rnd 8: ch 1. Hdc2tog, 10 times. Join. Fasten off, leaving a long tail for weaving. Weave tail through final 10 sts and pull tight to close.
Line up the center hole of rnd 1, and the center hole of rnd 8, and squish the piece flat. Using a yarn needle and contrasting color yarn, stitch on desired chips, sprinkles or icing designs.
