Pumpkin Pancakes
Supplies needed~ Large skillet or griddle Spatula Large Mixing bowl Wire whisk Ingredients~ 2 cups ready made buttermilk pancake mix (we just used the stuff we bought at the store, but you can certainly make your own!) 1 egg ½ cup pumpkin (fresh or canned) 1 tsp. Pumpkin Spice extract (optional) ¼ tsp. ground cloves ¼ tsp. ground nutmeg ¼ tsp. ground cinnamon Enough water to get your batter to the consistency you like. If you are using fresh pumpkin, it may take less water, or if you like thick batter, like we do. We use about 1 cup of water~give or take… Butter for pan |
Mix all ingredients together in a large mixing bowl, with a wire whisk. Place spoonfuls (for silver-dollar size) or more onto hot griddle or skillet that has been coated with butter spray or melted butter. Flip over to get both sides evenly cooked. This recipe also works well in a waffle maker!
Serving suggestion~Place 3-4 small pancakes on plate. Put 1 scoop of Pumpkin Spice Ice Cream (recipe found HERE) in center. Spritz on some whip cream. Drizzle with maple syrup, and dust with a little cinnamon~DELISH!
